The State of Hawaii Business Pivot Program, funded by federal CARES funds, provides Hawai?i?s small businesses and non-profits assistance to ?pivot? their businesses. Eligible companies may receive up to $10,000 for expenses related to pivoting or adjusting their company to meet the new economic environment. The Chamber of Commerce Hawaii has implemented a workshop series to support our community in understanding their eligibility, the application process, and help in pivoting their businesses.
This webinar highlights some of the innovative ways local restaurant owners and operators are pivoting their business as a result of the pandemic. Hear the stories and lessons learned from a panel of restaurant owners and operators who have made creative changes to their menu, product, dine-in, and take-out & delivery options. Michelle Karr-Ueoka
MW Restaurant
Born and raised in Honolulu, Michelle graduated from Punahou School. While obtaining a degree in Travel Industry Management at the University of Hawaii, Michelle?s passion for cooking was ignited after an externship at Alan Wong?s. Pursuing her dream, Michelle furthered her training at The Culinary Institute of America in Hyde Park, New York, during which she completed a stage at Daniel, and an externship at The French Laundry. She rejoined Alan Wong?s where she spent 6 years on the savory side. Moving again, back to New York, she staged at Thomas Keller?s Per Se, and it is here that she realized she wanted to be a pastry chef. In 2012 Michelle received the Rising Star Chef Award from StarChefs.com as a Pastry Chef.
In October 2013, Michelle Karr-Ueoka and husband Chef Wade Ueoka opened their first joint venture, MW Restaurant in Honolulu where they specialize in Hawaii Regional Cuisine. Both have traveled around the world, and draw inspiration from their journeys, but none bigger than the melting pot of Hawaii, and its exotic local bounty. In February 2014, MW Restaurant was nominated by the James Beard Foundation in the category of Best New Restaurant, and Michelle Karr-Ueoka in the category of Outstanding Pastry Chef. In December 2018, Michelle and Wade along with Mina Group and SalesForce opened Trailblazer Tavern in San Francisco?s Financial District.
Believing in giving back to the community, Michelle has joined multiple local Non-Profit Organizations such as Localicious, HCEF (Hawaii Culinary Education Foundation), and HAPA Hawaii Foundation. Michelle has also joined her mentor, Chef Thomas Keller, as a Ment?or Culinary Council Member.
Wade Ueoka
MW Restaurant
Wade Ueoka was born and raised in Honolulu, and graduated from Mid Pacific School. Wade took his first job as a fry cook at Zippy?s. Though his beginnings were humble, they did not deter him. Two years after working at Zippy?s, he landed a job as a prep cook at Alan Wong?s, and seven years after that, Wade rose to become chef de cuisine. Wade possesses a culinary degree from Kapiolani Community College, and notable stages at The French Laundry and Las Vegas? Alex. His biggest inspiration, and the one that continues to drive him to this day are the Asian delicacies he grew up watching his mother cook.

Believing in giving back to the community, Wade has participated in charitable causes that give back to the culinary and local community such as the Hawaii Agricultural Foundation and Culinary Institute of the Pacific at Diamond Head.
Jon Matsubara
FEAST
An award winning chef, Jon Matsubara has been making his culinary mark throughout Hawaii for the last 20 years, and is currently the Chef/Owner of FEAST, an island style, refined grinds restaurant located in Manoa Valley.
Named one of the ?Top Chefs to Watch? by Modern Luxury Hawaii Magazine, Matsubara created the first chef-driven restaurant for Bloomingdale?s as the Executive Culinary Director of their Ala Moana location in 2016. He was previously the opening Executive Chef of Merriman?s in Honolulu, Chef de Cuisine at the Hyatt Regency Waikiki Beach?s Japengo, and Executive Chef of the Royal Hawaiian Hotel?s Azure, where he was pivotal in helping the restaurant win Honolulu Magazine?s 2010 Hale Aina Award for ?Hawaii?s Best New Restaurant,? the 2010 Ilima Award for ?Hawaii?s Best Restaurants Critics Choice? and in 2011 Hale Aina Award for ?Oahu?s Best Restaurant Bronze.? Prior to Azure, Matsubara was an Executive Chef for Stage Restaurant, where he was awarded with 2007 Hale Aina Award for ?Best New Restaurant.?
He has been featured at the James Beard House in New York City and on the Food Network, Travel Channel, Zagat and the Today Show.
Chef Matsubara began his culinary career as a dishwasher at Honolulu?s acclaimed Alan Wong?s and Roy?s Restaurant, honed his skills and served as Chef de Partie in the famed New York kitchens of Restaurant Jean Georges, Tabla, Bouley and as Chef de Cuisine of Canoe House Restaurant in the Mauna Lani Bay Hotel. Matsubara attended the French Culinary Institute in New York and graduated with distinctions.
Kevin Suehiro
Nabeya Maido
Since 2013, Nabeya Maido has been owner Kevin Suehiro's passion, heart and soul. Born and raised in Hawaii, Kevin spent many years in Osaka where he ran an Izakaya and perfected his craft of Japanese hospitality and attention to quality and detail. Kevin takes pride in preparing fresh ingredients and a variety of homemade broths daily for his famous Japanese hot pot. Known as "Way of the Nabe" Nabeya Maido brings together flavors directly from Japan. Recently, he has been known for converting his dine-in nabe sets into single-serve nabe bowls that can be refrigerated and microwaved on-demand. The only thing larger than the taste of Kevin's hot pot is his heart.

David has spent time as an advisor to private equity firm FTV Capital, is an Omidyar Fellow and a Certified Value Builder?. He holds a bachelor degree, magna cum laude, in Economics and Philosophy from Claremont McKenna College and master in business administration from The Wharton School at the University of Pennsylvania.
